Why everyone keeps coming back.

Nestled in the charming town of Nelsonville, Wisconsin, Ruby Coffee Headquarters Cafe is a standout destination for coffee lovers and breakfast enthusiasts alike. This establishment masterfully blends the art of coffee roasting with the warmth of a neighborhood cafe, creating an inviting atmosphere where each visit feels like a genuine experience rather than just a quick stop.

Ruby Coffee Headquarters is not just any coffee shop — it is a passionate hub where freshly roasted beans take center stage. The coffee available here is nothing short of extraordinary, boasting a vivid freshness that only comes from roasting onsite. As customer Ranger Ben enthusiastically put it, "The coffee we bought was roasted yesterday... wow just Incredible is the only way to describe it!" This dedication to quality ensures that every cup poured has depth, complexity, and a captivating aroma that instantly awakens the senses.

The menu showcases a delectable mix of freshly baked goods and breakfast options designed to pair perfectly with their drinks. The buckwheat crepes, highlighted by Roots Chocolates in their glowing review, are a particular delight — crafted with locally sourced ingredients, they deliver a delicate earthiness and satisfyingly tender texture that beckons for just one more bite. Whether you’re craving a buttery croissant to accompany your expertly pulled espresso or a savory breakfast crepe, Ruby Coffee Headquarters makes every dish a memorable culinary encounter.

What truly elevates this cafe is the genuine hospitality and passion radiated by the staff. From the moment you step inside, you’re greeted with friendly smiles and knowledgeable baristas eager to share their love for coffee. Troy T’s experience perfectly captures this spirit, having made a special trip on a chilly winter day only to be rewarded with warm service and engaging coffee conversation. Their enthusiasm creates a comforting, personal ambiance that invites you to linger a little longer and savor the moment.

While the tasting room is more straightforward than some might expect, focusing on the essential joy of sipping remarkable coffee, it remains a place where quality and authenticity shine. Tim Halloran’s remarks remind us that sometimes, the simple joy of a thoughtfully prepared cup and a welcoming environment is all one needs.

Ruby Coffee Headquarters Cafe is more than just a stop for your morning caffeine fix — it is a vibrant community spot where dedication, local sourcing, and artisanal craft come together to offer an incomparable coffee experience. For those seeking fresh flavors, heartfelt service, and a cozy setting, this Nelsonville gem promises a journey into the heart of great coffee and delicious breakfast fare that will leave you inspired and satisfied.

Really enjoyed the coffee here. Thought the tasting room was going to be more of look-around, sample different coffee roasts & origins, have an experience, but it was more just order a coffee and head out. Still really great coffee & friendly staff though.

The staff here is just as fantastic as their legendary coffee. We went all-out and ordered a lot of things: oat milk cappuccino with maple syrup (the BEST), a pour over specialty, and a cortado (aka “cheers” on their menu). Some of the staff was training for their new location (which opens next week) and the espresso sat for a bit too long before we consumed it, so it was a little bitter. The coffee was fantastic: not at all bitter or acidic and pleasantly fruity. The pour over came in it’s own air-sealed pitcher and stayed super hot while we poured a few cups during our stay. Genius! We were bummed we missed the grand opening of their new location a few miles west, but we were thrilled to see their roastery operation and origin. Definitely worth a stop!

Second time here! First time was a delightful single origin coffee and latte. Second time was a roastery tour. Ruby continues to make great coffee and they are serious about their beans. Their dedication to sourcing and consistency is what keeps me going back.
